Beef Stew

Well, the husband and I are both sick, so I switched tomorrows meal plan for today!  Beef stew! 
  
Ingredients:
- 1 lb beef
- 2-3 slices of bacon
- 2 potatoes
- 1 can stewed tomatoes
- handful of baby carrots
- 1 onion
- garlic
- 1 can beef broth (or if you are a dork and forgot to buy beef broth, chicken broth works great!)

Start by cutting your meat into large bit size chunks and cook it in your skillet.
Meanwhile, cook your bacon in another pan.
While those are cooking, chop of your potatoes...
You can throw them in the crock pot with your can of broth.  Stir your meat on occasion too!  Next, cut up your carrots and onion.
Once your meat is nice and browned, throw it in your crock pot, wipe out your skillet, add a bit of olive oil and cook your onions and carrots.
Once your bacon is done, cut it up and throw it in your crock pot too.
 Once your onions are starting to brown slightly, throw them in your crock pot, add a bit of garlic and set on high for 4-5 hours or low for 10-12 hours. 

 Then if you are sick like me...climb in bed for 4-5 hours while it cooks.
 Then...test it out on your husband:
 I think he liked it. :-)
When I previously made this stew I used tomato paste and put in a little flour to thicken it up and I cooked it for 12 hours and I think I liked it better that way.  This way was a little more like soup.  But that was ok since we are both sick.
